Applesauce Oatmeal Muffins

These are one of our family's favorite muffins. We like to have them with Chef Salad on Fast Sunday. We usually make double or triple of this recipe to have with yogurt for lunches or smoothies for breakfast. These muffins can really be used for every thing! And they are a "no fail" recipe because we have used this recipe for more than 15 years!



Note from Mom: I was given this recipe by my Aunt Norene at my bridal shower. We have since found other well-loved muffin recipes but this one was our original favorite and we find ourselves coming back to whenever we want a quick and delicious muffin. 









Applesauce Oatmeal Muffins

Ingredients

-1/2 cup skim milk or almond milk
-1/2 cup brown sugar(firmly packed)
-1 cup unsweetened applesauce
-3 Tabsp. vegetable oil(*see note)
-1 egg
-1 1/2 cup oatmeal
-1 1/4 cup flour(*see note)
-3/4 tsp cinnamon
-1 tsp baking powder
-3/4 tsp baking soda
Topping Ingredients

-1/4 cup oatmeal

-1/8 tsp cinnamon
-1 Tbsp brown sugar
-1 Tbsp butter
Nuts optional

Directions


  1. Preheat the oven to 350 degrees
  2. Combine dry ingredients in a big bowl.
  3.  Combine wet ingredients in another bowl. 
  4. Add brown sugar to wet ingredients.
  5. Combined wet and dry ingredients together.
  6. Fill muffin cups and sprinkle topping.
  7. Put them in the oven for 20-22 minutes
*Note on ingredients: We sub half the flour with whole wheat pastry flour. We sub half the oil with more applesauce.
