Sweet and Sour Sweet Potatoes

This is one of my favorite meals. We call it "Sweet and Sour Chicken without the Chicken". The combinations of sweet potatoes, pineapple and the sweet almost tangy sauce is amazing and smells delicious. Even though it takes some time and it is not a last minute meal it is totally worth it to make.

We love this pasta and eat it a lot! It has a super lemony taste. This one is harder and takes longer than the 20 Minute Vegan Alfredo.  We usually eat this for dinner  and then put the left overs in containers and eat for lunch. This comes from the website The Vegan 8

20 minute Vegan Alfredo

This is a super easy pasta. It only has 8 ingredients and only takes 20 minutes. This one is not as good as The Best Garlic Alfredo but it is still really good. This Alfredo needs a good blender (like a Blendtec). This recipe is from the website The Vegan 8

Black Bean Lentil Tacos



These are our go to taco recipe. We have these almost every Tuesday for Taco Tuesday. We all have a "crunch" where we all bite into them at the same time. The crisp sound of taco shells is like angels voices to my ears. We love experimenting with different toppings. We also like to use the left overs to make burritos for lunch. Easy Peanut Noodles


We love this recipe so much. Not only does it give us kids a chance to practice our "amazing" chopstick skills but, it is so delicious and easy to make. This is a recipe that my mom gives me to make when she has to run errands and doesn't have time to make dinner. And the fact that I can make it without adult supervision and not ruin it is amazing in and of its self. So if you are looking for a go-to easy meal this is a perfect choice. Note from Mom: We received this ward cookbook as a wedding present from my dear friend, Jeannette Franklin, who was my supervisor in Freshman Academy at BYU. We've tried and loved many of the recipes in here (including our family's favorite Molasses Ginger cookies that we give away to friends and neighbors at Christmas time) but no recipe in this book has been made more than this spaghetti sauce recipe. It's not as easy as opening a jar bought from the store, but almost as easy. And it tastes SO much better! We love it! Also good over bread. 

Fast Sunday Salad

The reason why we call this Fast Sunday Salad is because we seem to always have it for dinner after we break our fast. I think the reason my parents started this tradition is because they probably thought " How can we get our kids to like Salad? Oh lets just give it to them after fasting and then they will love it." My mom says it's because she wanted us to eat something light after a day of fasting. But whatever the reason, it is seriously really good. Over the years we have mixed and matched toppings and dressing and have made it our own.
