These are our go to taco recipe. We have these almost every Tuesday for Taco Tuesday. We all have a "crunch" where we all bite into them at the same time. The crisp sound of taco shells is like angels voices to my ears. We love experimenting with different toppings. We also like to use the left overs to make burritos for lunch. And if this face is not convincing enough that this is the best Lentil Taco you will ever have I don't know what will.
Ingredients
- 1 cup dry lentils( about 3 cups cooked)
- 15 oz. can black beans, rinsed and drained
- 1 small onion, diced
- 2 cloves garlic, minced
- 3/4 tsp. cumin
- 1/2 tsp. chili powder
- 1/3 cup salsa
- 2/3 cup vegetable broth, more if needed
- Taco Shells
- Salt to taste
- Toppings of choice: tomato, lettuce. corn, cheese, salsa, guacamole, cilantro, etc.
