We love this recipe so much. Not only does it give us kids a chance to practice our "amazing" chopstick skills but, it is so delicious and easy to make. This is a recipe that my mom gives me to make when she has to run errands and doesn't have time to make dinner. And the fact that I can make it without adult supervision and not ruin it is amazing in and of its self. So if you are looking for a go-to easy meal this is a perfect choice. Notes from Mom: Awesome! Double sauce and noodles/veggies except for crushed red pepper (adults added more or sriracha sauce at the table). I used a full box of brown rice noodles. I didn't have hosein or green onions but it was still so good.
Ingredients
- 1/4 cup low sodium soy sauce
- 1/4 cup water
- 2-3 cloves garlic, chopped
- 1 tbls apple cider vinegar
- 1 tbls hoisin sauce
- 2-3 tbls chunky peanut butter
- 1/4 tsp ground ginger
- 1/8 tsp red pepper flakes
- 1/2 package of Thai Kitchen Rice Noodles
- 1 package of Frozen Vegetables
