The Best Ever Whole Wheat Bread

This bread is legendary! Seriously! People have loved and begged for this bread recipe where ever we bring it. I even remember one of my friends in 2nd grade telling me that this is the best bread she has every had. We make it every Saturday to meet our sandwich and toast needs throughout the week. My dad has changed this recipe several times to get it just right. We really hope you enjoy this recipe as much as we have.



Ingredients
-4 2/3 c. Warm-Hot Tap Water
-2/3 c. honey
-4 1/2 teasp. Salt
-6 tablesp. ground flax seed
-2 tablesp. &1 teasp. yeast
-2 2/3 tablesp. vital wheat gluten
-11 c. freshly ground hard white wheat flour
(you want dough slightly sticky)

Directions 
  1.  Put all the ingredients in your mixer (we have a Bosch) EXCEPT for the flour in the order given. 
  2.  Add in 11 cups of flour, one at a time while the mixer is on a low setting
  3.  Knead in mixer for 5 minutes on medium setting. Then, check the dough.( If it is sticky add 1/2 more flour)   
  4.  Knead for 5 more minutes.
  5.  Remove dough and separate into 4 equal parts( use scale if you have one.)
  6.  Form into loaves and place into 4 greased bread pans( we use parchment paper)
  7.  Cover and let rise in a warm spot for 35 minutes.
  8. Then turn on the oven for 350
  9.  Bake for 25 minutes.
